FAQs

What is the secret to a good angel food cake? ›

Egg Whites: The star of the show! They provide all of the leavening for angel food cake. Using only whites (no yolks) gives this cake a super light texture. Be sure to use only fresh eggs; liquid egg whites in a carton have been pasteurized, which can prevent them from whipping into stiff peaks.

Can you make jelly roll from angel food cake? ›

Angel food cakes can sometimes be intimidating due to using a tube pan, precise cooling methods, unmolding, etc. This recipe takes all of the guesswork out of that by baking a thin angel food cake in a jelly roll pan. The bonus is that it only takes about 15 minutes to bake and cools relatively quickly.

How to improve angel food cake mix? ›

Give your boxed angel food cake mix a summery twist by adding a can of crushed pineapple to it. Gently fold it into the whisked batter, careful not to deflate the mixture. If you over-whisk it, the cake will turn out chewy and dense.

How do you keep angel food cake fluffy? ›

The egg whites are actually the sole leavening ingredient providing all the cake's rise. Use freshly separated eggs because they aerate the best. Carton egg whites or egg whites that have been frozen won't expand as much during the whipping process, which will negatively affect the rise of your cake.

What does cream of tartar do in angel food cake? ›

Cream of tartar is an acid and helps to stabilize the whipped egg whites. There is really no substitution for cream of tartar. If you don't use cream of tartar in this recipe, the cake will collapse.

Why do you rest angel food cake upside down? ›

Every angel food cake has to be cooled upside down in the pan. Why? Until the cake is completely cooled, its spongy structure hasn't set. Flipping it upside down makes sure it doesn't collapse during that process.

Why can't you mix angel food cake in a plastic bowl? ›

Use only metal or glass mixing bowls when making Angel Food Cake. Plastic or ceramic bowls retain oils which will disturb the rising process. When beating egg whites try not to under beat or over beat; egg whites should be stiff but not dry.

What makes angel food cake sticky? ›

Sticky cake and cupcake tops are from a reaction with sugar and water. Sugars are hygroscopic, meaning they attract water. Within baked goods, sugars help maintain a moist and tender crumb. Sugar on the exposed tops, however, will grab water from humid air, creating a wet or sticky top.

Is strawberry shortcake made of angel food cake? ›

People with diabetes can safely eat Angel Food in moderate amounts because it doesn't have simple carbohydrates and sugars, meaning that it won't cause a sudden or significant spike in blood sugar levels.

Can you make angel food cake in a regular cake pan? ›

If you don't have an angel food cake pan, that's okay. You can still make this cake, but you need to use a pan with tall sides, like a loaf pan, because the batter rises considerably, and you still need to cool it upside down on an elevated surface.

How to tell when angel food cake is done? ›

An angel food cake is finished baking when the cake is golden brown and it springs back when touched. If the cake stays pressed when you touch it, it isn't finished baking and needs a few more minutes.

Why don't you grease the pan for angel food cake? ›

2) Either greasing or not greasing the pan produces a nice cake. The difference is in heft. If you want a truly light, spongy, angel food cake, DON'T grease the pan.

Why did my angel food cake come out dense? ›

Greasing the pan can result in a flat, dense cake. Always flip the cake pan to cool your angel food cake with the open side down. Angel food cake will continue to set as it cools, and it can sink down in the pan and collapse if you don't flip it to cool.
