  • Ground beef
  • Onions
  • Garlic
  • Beans – I like to use all red kidney beans but you can use a variety of beans if you’d like. Black beans, pinto beans, and chili beans are all good options.
  • Crushed tomatoes
  • Distilled white vinegar – this “secret ingredient” adds just a touch of acid to round out the flavor. Don’t worry, you won’t taste the vinegar!
  • Seasonings – Chili powder, ground cumin, crushed red pepper, salt, and black pepper.

CHILI SEASONING MIX: You can also use 4-5 Tablespoons of chili seasoning mix instead of the chili powder, cumin, salt, and pepper. Then add a pinch of crushed red pepper if desired.

How to Make Chili in the Slow Cooker

I also love how easy this chili is to make.

Simply brown the raw ground beef, onion, and garlic in a skillet, then add it to your crockpot along with all the remaining ingredients. Set to low heat and cook for 4-6 hours or high heat for 2-4 hours.

Then go about your day and come home to a delicious slow-cooked dinner.

Can dinner be this quick and easy every night, please?

Storage

To store leftover chili, allow it to cool completely and then transfer it to an airtight container. You can store it in the refrigerator for up to 4 days or freeze it for longer-term storage.

We like to enjoy leftover chili on chili dogs with tortilla chips the next day – so flavorful!

Topping Ideas

For the ultimate bowl of chili try adding some tasty toppings:

  • shredded cheese
  • sour cream
  • hot sauce
  • corn chips
  • avocados
  • jalapenos
  • chopped bell peppers
  • diced tomatoes
  • chopped onion
  • cilantro
  • green onions

My favorite topping? Shredded cheese. It melts right into the steaming hot chili and gives it a bit of added creaminess. So good!

FAQ: Easy Crock Pot Chili Recipe with Ground Beef

Can I use ground turkey instead of ground beef?

Yes, you can substitute ground turkey for ground beef in this chili recipe. Ground turkey is a leaner alternative and will work well in this dish.

Can I adjust the level of spiciness in the chili?

Yes, you can easily adjust the spiciness of the chili to suit your taste. If you prefer a milder chili, reduce the amount of chili powder and crushed red pepper. For those who enjoy a spicier kick, increase the amounts or add a little bit of your favorite hot sauce or some diced jalapeños.

Can I make this chili on the stovetop instead of using a slow cooker?

Yes, you can adapt this slow cooker recipe for stove top cooking. After browning the ground beef, onions, and garlic in a large pot or Dutch oven, add the remaining ingredients and simmer over low heat for about 1-2 hours, stirring occasionally to prevent sticking. Adjust the cooking time as needed until the flavors meld together.

Do you have to brown ground beef before putting it in the crockpot for chili? ›

Many slow-cooker chili recipes have a step for browning the beef before it goes into the Crock-Pot. While this step isn't necessary, caramelizing the meat creates richer, bolder flavors. But, if you don't want to clean the extra dish or you don't have time to make it happen, feel free to skip this step!

How do you keep chili from getting watery in a slow-cooker? ›

Mix in a scoop of cornstarch, all-purpose flour, or oats.

Why does my crockpot chili taste bland? ›

Use More Spices and Aromatics

The flavors in a slow-cooker dish can become muted over the long cooking time. So we up the amounts of aromatics and spices in the recipes beyond what is normally used. But it's not just increasing spices that does that trick; you'll also want to increase their potency.

Do you drain beans for chili? ›

Too much liquid will thin your chili

The same holds true for using canned beans in chili. According to Taste of Home, you should typically drain canned beans before adding them to your pot of chili. All that liquid can seriously water the chili down, diluting all its flavors.

Should I drain beef before adding to chili? ›

The beef will release a lot of fat and liquid — do not drain it; you'll skim the fat off at the end. Add the ancho chili powder, chipotle chili powder, cumin, oregano, coriander, smoked paprika, and cinnamon (if using). Cook, stirring frequently, for 1 to 2 minutes, until well combined and fragrant.

Can I put raw beef straight into a slow cooker? ›

There are two different issues: safety, and flavor. From a safety point of view, assuming you don't overload your slow cooker, and it comes up to safe temperatures (140 F, 60 C) in less than two hours (preferably much less), it is perfectly safe to begin cooking in a slow cooker with raw ground meat.

How to make chili thicker in crockpot? ›

If you want more of a smoky flavor, add cumin, Spanish paprika, ancho chili powder, or a combination. If you are looking for more heat, add cayenne, crushed red pepper, or Hungarian paprika. If it's too spicy add a little brown sugar and some sweet paprika.

What makes a good competition chili? ›

The chili contains very little or no grease. Winning chili must look good, smell good and taste good. Because the judging process takes a couple of hours, chili must retain its color, consistency, aroma, taste and afterbite while hot, warm, lukewarm and then cool in a styrofoam judging cup.
