Pork chops are one of our favorites for dinner and we love them any way you can prepare them. We took advantage of the warm spring weather and decided to get the grill going for these marinated pork chops.

Balsamic Pork Chops

I am in my normal, IT IS ALMOST TAX TIME, madness. Accounting bookwork is my least favorite task. I procrastinate every year and then in the rush to get it all to the accountant, I almost lose my dang mind.

My family is ready to ship me off to my own island or somewhere far, far away. When will I ever learn? This year, this year I am swearing to do it differently. I am pretty sure my husband is holding me to it, or ELSE!

So last week we decided to buy a Ranger for the ranch. You know one of those sport utility things that are like a 4 wheeler for 2 or 3. I was working on the accounting but I gladly took a break and went with my husband to the motorsports store.

We had to wait for them to put the top bars on or whatever, so we ran by the local grocery store. They were having an amazing sale at the meat counter and I picked up a couple of packages of these lovely pork chops.

The pork chops however lovely, totally took a back seat to how excited we were over the Ranger. It is perfect for driving through the pasture and doesn’t beat the heck out of me like the 4 wheelers do.

It will be the handiest thing ever for checking cows, fencing and fun stuff too. We have only had it a few days and now I don’t know what we did without it.

So my days have been double busy trying to get the impossible amount of bookwork plus my usual social media list done and a quick dinner was in order.

Boneless pork chops are perfect for a quick weeknight dinner and I have the best pork chop marinade to share with you today.

How to make a Pork Chop Marinade:

  • Olive Oil
  • Balsamic Vinegar
  • Fresh Minced Garlic
  • Fresh Minced Rosemary
  • Salt & Pepper

Just combine these simple ingredients in a bowl or zip top bag. Add your pork chops, cover or seal the bag and place in the refrigerator for an hour or two or overnight.There is so much flavor in this quick balsamic marinade. It would also work for beef or chicken.

I popped the pork chops in the refrigerator and continued on my list. I was hoping my husband would be around to do the actual grilling but he got home a little later than I planned. I am not the grilling expert that he is, but I can manage.

You can also pan fry or use a grill pan to cook these marinated pork chops or pop them in the oven on a sheet pan to cook if grilling isn’t an option.

Ingredients

  • 4- 5 boneless pork chops
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon minced garlic
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper

Instructions

  • Mix olive oil, balsamic vinegar, garlic, rosemary, salt and pepper together in a bowl.

  • Dip pork chops in marinade, coating both sides. Place pork chops in a plastic zip top bag or shallow bowl. Pour remaining marinade over pork chops.

  • Seal bag or cover bowl and refrigerate for 1-2 hours or overnight.

  • Preheat grill and grill pork chops - 3-4 minutes per side or until cooked through to 145°.

  • To cook in the oven- preheat oven to 375°. Bake 10 minutes and turn pork chops. Continue to bake 8-10 minutes or until cooked through.

  • Serve immediately.
